Feta is good, but cheddar is jus...I don't know. Feta is good, but cheddar is just classic. You can't ever go wrong with cheddar, but feta just sometimes doesn't quite hit that spot that's hankering for cheesy eggs.<br /><br /><br /><br />The breakfast that I miss making for myself from back in my cafe days in massachusetts: cheesy eggs all mixed in with hash browns (chunked potatoes, not shredded), chopped spinach, and some pesto mixed in with the eggs and cheese.(Or salsa and avocado instead of pesto. But usually pesto.) Depending on my mood, sometimes also with bite-sized chunks of bacon mixed in. Yum.
